Pav Bhaji Recipe: Indian Street Food

I love Indian street food. In fact, much to my mum’s frustration that Mr. FauxRunner shares, I could survive on street food for breakfast, lunch AND dinner. Pav Bhaji is one of my favorites. Pav Bhaji is an Indian street food sold in deliciously smelling carts, consisting of a vegetable curry and served with bread rolls aka Pav. The curry is meant to be spicy, and the bread roll is toasted in ghee to counter the spicy curry. It is eaten with cut onions and a squeeze of lemon along with a dollop of – butter!

Pav Bhaji is a perfect wholesome meal of vegetables and carbs and yumminess. The Pav Bhaji recipe is super easy and all you need is boiled vegetables (whatever you have in your fridge) and the spice mix. 

Heat a bit of oil and add finely chopped onions to it. Fry the onions with a little salt until it starts turning clear. 

Add ginger garlic paste and chopped tomatoes.

Boil vegetables and add them. Pick potato or sweet potato as the carb heavy “binding” vegetable. Add cauliflowers, carrots, peas, etc. I’m short of time when I’m cooking and use the Costco organic vegtable mix instead.

Add 3-4 tsp of Pav Bhaji masala, from any Indian store. Making my own spice mix is fresher, but honestly, I’m always short on time and a store bought mix works just as well.

Let all of these simmer for about 10 minutes. Once cooked well together, use a potato masher to mash up everything, or lightly use a hand blender. 

Add a dollop, a huge dollop, of butter as you mix it all together. 

Toast some bread roll in butter and serve with cut onions and a slice of lemon. The lemon enhances the spices in the curry.

And that’s it – it hardly takes 15 minutes to cook it all up. I boil my vegetables in the microwave to get through faster.

    Yum, I love pav bhaji! It was the first Indian dish I made for my husband when we were dating. I’ve never tried it with sweet potatoes though. I’ll have to keep that in mind next time.
